Our Experience

After buying, tasting, shopping, cooking and tasting again, what have we learned? There’s a lot more to the Lincoln food scene than any of us were aware of. We enjoyed new foods and visited some amazing businesses. We experienced aspects of ethnic cultures that have been right under our noses the whole time. Most importantly, we experienced the powerful effect that food has on us all. As we stood in the kitchen recreating the dishes, we slowly forgot about the project or grades. Eventually, we were talking about our lives and families and hobbies. We were making jokes and laughing together. This project showed us more than just ethnic food in Lincoln, it brought us together as people. 

Recreations at Home

So the question really is, can you recreate these dishes at home? For this project, we did a lot of research to make sure we were choosing dishes that could be made in a home kitchen. We didn’t have to use special equipment or utensils, and none of the ingredients were difficult to find.

Chicken Tikka

If Indian food intimidates you, try this recipe. It’s easy to make and jam-packed with warm Indian spices that are mellowed by tangy yogurt. The fatty cashews and sweet raisins add balance to the dish, and fresh cilantro adds freshness. If you have a little patience and are ready to experiment with Indian food, this dish is perfect for you.

Elote

The Elote was incredibly easy to make and delicious. It can be made by someone that has next to zero cooking experience. After the corn is roasted, everything gets thrown into a bowl and mixed together. This dish is simultaneously rich from the mayo but also bright and fresh from the cilantro and lime. Bahn Mi

The Banh Mi was the most difficult to reproduce mostly because the pork belly was an ingredient with which we had very little experience. This recipe also has several steps, and a few of the ingredients have to be pickled or marinated for a few hours. If you like Asian flavors and enjoy time in the kitchen, this dish is perfect for you.
