Elote Recipe

Ingredients:

  • 2 cans of whole kernel sweet corn

  • 1/2 cup Mexican crema, or sour cream

  • 1/2 cup mayonnaise

  • 1/2 cup chopped cilantro

  • 1 clove garlic, minced

  • 1/4 teaspoon ground chipotle pepper, to taste

  • 2 tablespoons lime juice, from 1 lime

  • 1 tsp salt

  • 1 tsp black pepper

  • ½ cup parmesan cheese

  • Lime wedges, to serve

  • Chopped cilantro to serve

Instructions:

  • Preheat oven to 350 degrees F, and line a baking sheet with aluminum foil. Drain corn and place on baking sheet. Bake corn until it starts to brown just slightly. (About 10 min.)

  • Whisk together the sauce:
    In a bowl, whisk together the crema, mayonnaise, cilantro, garlic, chipotle pepper, lime zest and lime juice, salt, black pepper and parmesan. Taste and season the mixture with salt if needed. (Crema has a little salt already, so add extra judiciously.) Set aside. 

  • Combine: 

  • Once the corn is slightly browned, mix it into the sauce. Garnish dish with fresh cilantro, lime wedges and parmesan cheese and enjoy.
