Elote Recipe
Ingredients:

2 cans of whole kernel sweet corn

1/2 cup Mexican crema, or sour cream

1/2 cup mayonnaise

1/2 cup chopped cilantro
-
1 clove garlic, minced
-
1/4 teaspoon ground chipotle pepper, to taste

2 tablespoons lime juice, from 1 lime
-
1 tsp salt
-
1 tsp black pepper
-
½ cup parmesan cheese
-
Lime wedges, to serve

Chopped cilantro to serve
Instructions:

Preheat oven to 350 degrees F, and line a baking sheet with aluminum foil. Drain corn and place on baking sheet. Bake corn until it starts to brown just slightly. (About 10 min.)

Whisk together the sauce:
In a bowl, whisk together the crema, mayonnaise, cilantro, garlic, chipotle pepper, lime zest and lime juice, salt, black pepper and parmesan. Taste and season the mixture with salt if needed. (Crema has a little salt already, so add extra judiciously.) Set aside. -
Combine:

Once the corn is slightly browned, mix it into the sauce. Garnish dish with fresh cilantro, lime wedges and parmesan cheese and enjoy.
